How can I control who can see the gift collection total?

It's very simple. From your Thankbox management page just click the Manage gift collection button from the side menu.

From the popup that appears you'll see the Who can see the total amount collected? dropdown option. You can use that to change who is allowed to see the total collection balance - either just you, as the organiser, or everyone who can leave a message.
